Lepre alla cacciatora

INGREDIENTS:
Olive oil,
salt,
garlic,
rosemary,
sage,
chili pepper,
hare,
tomato sauce,
Red wine,
beef broth.

PROCEDURE: Make a battutino with oil, salt, garlic, rosemary, sage and chili pepper. “lmbionditi” these ingredients are added the pieces of hare, to which we will have done “to make the water”, that is, they will have been put in a pan over the slow fire without smells, with the purpose to remove from the meat the surplus wild. Hare and golden battuto are left to flavor, adding tomatoes and then red wine and meat broth, cooking everything.
