Salimbecca (Panzanella)

INGREDIENTS:
Stale bread,
water,
salt,
basil,
celery,
onion,
cucumbers,
tomatoes,
vinegar,
pepper.

PROCEDURE: It takes stale bread for at least two days; once the bread was homemade. The bread is left in the water for a few hours, then squeezes it well with your hands and puts it in a tray. Above, finely chop many celery vegetables, a few leaves of salad, onion and, to those who like it, garlic, cucumber, pepper (green), tomato. It is seasoned with oil, vinegar, salt and pepper to taste.
