PROCEDURE: The pici are prepared: flour, water and a pinch of salt. Mix the dough, begin to pull the pici and prepare them in skeins and leave them on the pastry board or on the table. In a casserole fry a chopped onion, celery, carrot in the oil; then add the minced pork and beef and let it brown. Wet with a nice glass of red wine and let the alcohol evaporate. Finally add the tomato puree and cook over low heat for 1-2 hours.
