Funghi strascicati in padella

INGREDIENTS:
Mushrooms of various species,
olive oil,
garlic,
salt,
chili pepper,
pork ribs.

PROCEDURE: Many species of mushrooms can be cooked with this recipe. We report in particular the Pinarolo (Boletus elegans) and the Paonazzi (Russula hydrophila).
Cook the pork ribs together with olive oil or lard, garlic, salt and chilli. Cleaned and washed the mushrooms are put in the pan bringing them to cook with their own water.

Recipe to combine with a bottle of Rosso di Montalcino Beatesca.
