Cipolle in trippa

INGREDIENTS:
Red Onions,
parsley,
bacon,
garlic,
olive oil,
salt,
peeled tomatoes,
slices of bread,
pecorino cheese.

PROCEDURE: Clean at will, medium-sized red onions, split as a sign of the cross. Prepare a mixture of parsley, pork belly, garlic, salt and oil. It is left to roast in the right place. Put the onions in the pan to flavor, then add the peeled tomatoes and cook almost on low heat. Before serving the onions, sprinkle with bread and pecorino cheese or grated Parmesan, leaving them to cook for a few more minutes.
