Chard or Spinach
Boil spinach or chard. Brown in pan with salt and black pepper and garlic if you like. Add ricotta. Make small discs with this mixture and dredge in flour. Drop in boiling water. When they float, they are ready to be drained.
Serve with meat sauce or with olive oil that has been warmed with sage, garlic and salt.
